One Pot Lemon Orzo Shrimp
Saturday, August 08, 2015Have you heard of the blog Damn Delicious? No? Well you need to check it out, go here. I love all of her recipes and look at it often for dinner ideas. I've loved every one of the recipes I've tried from her site, this one included. At first glance I thought shrimp, tomatoes and peas sounded like an odd combo...I was wrong! This is delicious! Give it a shot!

One Pot Lemon Orzo Shrimp
Prep Time: 10 min. | Cook Time: 30 min. | Serves 4
Ingredients:
1 lb. medium shrimp, peeled and deveined
Kosher salt and freshly ground black pepper, to taste
1 tbsp olive oil
3 cloves garlic, minced
1 onion, diced
1/2 tsp. dried oregano
8 oz. orzo pasta
2 cups chicken broth
1 (14.5-oz.) can diced tomatoes, drained
1/2 cup frozen peas
Juice of 1 lemon
1/4 cup grated Parmesan cheese
Preparation Instructions:
Season shrimp with salt and pepper. Heat olive oil in a large skillet over medium high heat. Add garlic, onion and oregano, and cook, stirring often, until onions have become translucent, about 3-4 minutes.
Add orzo and cooked until lightly browned, about 1-2 minutes. Stir in chicken broth and 1/2 cup water. Bring to a boil; cover, reduce heat and simmer approximately 10-12 minutes until pasta is cooked through. Stir in tomatoes, peas, lemon juice and shrimp. Cover and cook until shrimp is cooked through, stirring occasionally. Serve sprinkled with Parmesan cheese.
